Easy 3 Step Marinara Sauce

Sometimes, the best recipes that come out of your kitchen are the ones that you make in a rush. You toss, saute, drizzle, blend, and hope that the end result won’t be a complete disaster. That first taste is your moment of truth. And sometimes, those moments turn into culinary discoveries.

We had just such a moment in our kitchen recently. After frying up some ready-made frozen mozzarella sticks for some surprise guests, and finding out that the flavor was non-existent, there was only one thing that could save the dish: marinara sauce.

So, instead of making it the traditional way, we tossed all the ingredients in a blender, pan-cooked the resulting mixture, and just like that, our sauce was ready. And it somehow even tasted better.

In the end, we saved the dish by cutting up the mozzarella sticks into bite sized pieces with toothpicks, and drizzled marinara across them. And thus, the day dish was saved.

And then we got a bit obsessed; it was made atleast 3 more times that week. One of those times was for a homemade pizza base, and once you try that, you won’t be able to go back to the traditional tomato sauce.

Instructions
  1. Add the tomatoes, onion, garlic and tomato paste to a chopper/blender and blend until it forms a slightly chunky paste.
  2. In a pan, heat the olive oil and add the above paste. Also add the salt & pepper. Stir often and let it reduce until the tomatoes are cooked & the sauce darkens in color (do not add any water).
  3. Take the pan off heat. Add the dried parsley, mix well and serve with your favorite appetizers!
