UAE National Day Inspired Easy Recipe Ideas 3


If you’re a resident of the UAE, the National Day is one of the highlights of the year. It’s definitely one of our favorite holidays in the Nomsville family. While all the other events and festivals are usually based on culture or religion, 2nd December is one holiday that the entire UAE population, be it expat or a local, celebrates with unbridled enthusiasm and surprising patriotism.

It is a testament to the amazing job the country has done in inspiring such patriotism in its people, that we have seen a lot of expats who’ve lived in the UAE for a few years to proclaim themselves as ‘Dubaian’, or whichever emirate-ian they happen to be. 

So while you scourge the markets for National day decorations for your outfits and homes and cars, we want to help you celebrate in the best way we know: with food.

With National Day themed cakes & chocolates in abundance, we wanted to help you get inspiration from things you probably already have in your kitchen, and can easily make yourselves, or have the whole family join in on the fun!

Ingredients

Instructions
  1. Cut the aubergines in half and slice them. In a medium sized pan, add the olive oil and aubergines and stir-fry at medium heat for about a minute. Add soy sauce and continue for another minute, or until aubergines become golden on both sides. Remove from heat and cool for 2 minutes.
  2. In medium sized dessert cups, arrange the aubergine slices into about 3 layers. Layer the chopped tomatoes until the cups are about half full. Layer the chopped capsicum equal to the tomatoes.
  3. In a bowl, combine all ingredients for the yogurt dressing and whisk until smooth and creamy. Adjust ingredients according to taste. Add a dollop of dressing to each of the salad cups (about 1 tbsp or more as preferred).
  4. Garnish with a mint leaf, olive slice and small piece of chopped tomato (or feel free to decorate according to your whim).
Recipe Notes

note: labneh can be used as a substitute for yogurt. Add a pinch of chili powder to the yogurt dressing if you like a bit of spice.

Colorful Yogurt Based Dips & Dressings

Red Pepper & Chilli Yogurt Dip – Blend 1 cup of yogurt with 70g of red peppers and 1 tbsp of your favorite chilli sauce (we used Heinz Chilli Garlic sauce). Serve chilled.

Mint & Yogurt DipBlend 1 handful (about half a bunch) of fresh mint leaves with 1 cup yogurt and a tsp of salt. Serve chilled.

Feta & Yogurt Dip – Coarsely chop about 40g of feta cheese and whisk by hand into 1 cup of yogurt. Serve chilled.

Olive & Pepper Dip Blend 30g of olives with 1 cup of yogurt and 1 tsp. of crushed black pepper. Serve chilled.

    I just loved those yogurt dips. Dishes made with yogurt makes me go oo-la-la !!!! Lately I tried this amazing recipe made with yogurt. Its a raitha made from yogurt, boondi raitha , and it came out really well. It can be sided with chappatis and rice.

      Thanks for the feedback Aaliya! We love yogurt dishes too.. they’re awesome & healthy at the same time 🙂 you should try our tahini dressing, it’s also yogurt based. In the meantime, we’ll check out that boondi raita, sounds interesting!
